Grandpa Clarence's Gazpacho

Peeled and diced cucumbers
Seeded and chopped tomatoes
Coarsely chopped onions
Coarsely chopped bell peppers
Chopped celery
V-8 juice
Italian dressing

Cut each vegetable into bite-sized pieces.  Add equal parts of V-8 and Italian dressing to cover the vegetables.  Refrigerate for at least one hour to marinate then serve cold.

Grandpa also occasionally added some olives (black or green), green chili, and/or cilantro.  He would serve a sandwich and a soda on the side.
