Granny Elizabeth's Salmon Cakes

Combine the following ingredients:

1 can salmon, chopped.
1/4 cup onion, finely diced.
3/4 cup bread crumbs
1 T. dijon mustard
2 T. mayonnaise
1 egg, lightly beaten.
Salt and pepper to taste.

Combine as you would meatballs and form into patties.  Fry in an oiled skillet until golden brown (about 2 minutes per side).  You may need to add more oil for the second and third batches.  Serve with Grandpa's tartar sauce (equal parts mayonnaise, yellow mustard, and dill relish).
