Christi's Fish Tacos

This is a favorite recipe in my family because it is super speedy to make and my kids love it!

1 pkg of frozen fish sticks or fillets
corn or flour tortillas
shredded cabbage
diced tomatoes
shredded cheese
cilantro
diced green onion
chipotle seasoning
ranch dressing
lemon/lime wedges for garnish

Bake the fish according to package instructions.  Layer corn tortillas over the top of the fish during the last minute of baking to soften them.  (I like corn tortilas but my kids prefer flour.)  While the fish are baking mix up 1 cup of ranch dressing with 1 tsp of chipotle chili powder (or to taste) and let it dissolve and marinade in the fridge. 

When the fish are baked, assemble two fish sticks or one fillet per tortilla.  Cover with shredded cabbage (purple for more color variety), diced green onion, shredded cheese, diced tomato, cilantro and sauce.  Enjoy!

Variations:

We also enjoy eating fish tacos with pico de gallo (instead of diced tomatoes, onion, and cilantro) and guacamole.  Sour cream is another alternative in place of sauce if you can't track down chipotle powder.
